What real saffron costs — and why
Saffron is the most expensive spice in the world by weight and one of the cheapest by serving. Both statements are true, and the gap between them explains most of the confusion about price.
It takes roughly 150 flowers to make a single gram of saffron, and every stigma is picked and cut by hand, in a season that lasts about two weeks. That is the whole explanation for the price.

Why cheap saffron is rarely cheap
Two things drive the low end: grade and adulteration. A gram of Pushal contains yellow style that adds weight but no flavour, so you use more of it for the same result. And nearly half of retail samples in one 2024 study were adulterated outright.
Price per gram is the wrong unit. Price per cup is the right one.
What to actually look for
- A named origin — a province, not a country
- A stated grade — Super Negin, not "premium"
- A harvest date on the package
- An ISO 3632 certificate you can actually read
- Whole threads, never powder
A brand that gives you all five is not the expensive one. It is the one where you know what you bought.
