Cooking With Saffron

Bloom saffron before you cook with it. Steep 15–20 threads in two tablespoons of warm — not boiling — water for ten to twenty minutes, then pour the gold liquid into the dish. Dropped in dry, a thread releases a fraction of what you paid for.

Almost every mistake people make with saffron is one of two things: using it dry, or using far too much. Both are easy to fix.

Quantities

Keep it alive

Saffron does not spoil, it fades — and faded saffron looks almost identical to fresh. Stored airtight, opaque, cool and dark it holds strength for two to three years; stored badly it loses more than half its colouring power in three months.
