Saffron is one of the more studied culinary spices, with most published work concentrated on mood. The research is real but it is early, the studies are often small, and the doses used are frequently higher than culinary use. We report what the literature says and stop there.

The compounds involved

Saffron’s activity is generally attributed to crocin, picrocrocin and safranal — the same three compounds used to grade it. Reading a saffron lab report explains what each one is and how it is measured.

How much people actually use

Culinary quantities are small — 15 to 20 threads for a dish serving four, three to five for a cup of tea. The dosage calculator converts that to grams, and the saffron tea ritual describes the everyday version.
